Aged Kimchi Pajeon

食材 Ingredients
  

  • 30 g All Purpose Flour
  • 20 g Sweet Potato Starch
  • 1/8 tsp Baking Powder
  • A pinch of Salt
  • A pinch of Black pepper
  • A pinch of White pepper powder
  • 1/4 tsp Soy sauce
  • 1/4 stp Fish sauce
  • 15 g Egg white
  • 55 g Iced cold water
  • 1/2 tsp Sesame oil
  • 1/2 tsp Olive oil/ Any cooking oil
  • 2 tbsp Aged kimchi chopped/cut with scissors
  • A handful of Carrot shredded
  • 2 tbsp Chinese Chives chopped/ short pieces

步骤 Method
 

  1. Except for the oil and vegetables, mix together the rest - dry ingredients, water, egg white, and seasonings until smooth.
  2. Add sesame oil and cooking oil, stirring until the batter is silky smooth.
  3. Mix in kimchi, carrot, and chinese chives.
  4. Heat a pan with enough oil to cover the bottom.
  5. Once the oil is heated, but not too hot, pour in the batter and quickly spread it thinly.
  6. Keep on medium heat, pan‑fry for about 2 minutes.
  7. Flip, then fry another 1–2 minutes until crisp and golden.
  8. Place the pancake on paper towels to drain excess oil.
  9. Cut them into equal pieces, sprinkle with sesame seeds and a little gochugaru.

小贴士 Tips

Because aged kimchi is very sour, you’ll need to cut it into small pieces with scissors before mixing it into the batter. If you don’t have aged kimchi, you can simply use more regular kimchi, or add just a splash of apple cider vinegar to mimic that tangy depth.
