腌黄萝卜 Danmuji
Danmuji 是韩国料理里常见的腌制黄色萝卜,传统做法是以白萝卜和栀子果的天然橙黄色色素制作而成。通常作为搭配主食的小菜(banchan),或者是常被放在韩式寿司卷(kimbap) 里,作为配料。

为什么你会喜欢Danmuji?
跟一般的腌菜一样,腌黄萝卜也扮演者酸甜脆口,清爽解腻的角色。不管是搭配炸酱面,或者是作为三明治,寿司卷的配料,Danmuji 都会给这菜肴带非一般的味蕾刺激!

在传统的做法里,栀子果是用来给Danmuji上色的食材。栀子果含有藏红花素、类胡萝卜素等色素,经过煮水煮能释放出鲜亮的黄色,还有清新的果香和淡雅花香,能提升腌黄萝卜的层次感,让萝卜吃起来更清爽可口。但是现今很多人也会选择不用栀子果,而是用姜黄粉来作为染料的替代。我个人觉得风味有所不同,但是如果你不介意这细微的味道上的区别,以便利来说,姜黄粉也是不错的选择~

料理步骤
- 把栀子果敲碎,暴露出种子
- 把所有栀子果放进锅子里,加水,大火烧开后,让它保持微滚5分钟
- 时间到后,把栀子果过滤掉,水应该要有50g, 不够的话就再加点水充数
- 趁热加入糖和盐,搅拌至融化
- 再加入米醋,搅拌均匀,放凉备用
- 给白萝卜削皮,得削得深一些,以免有苦涩的味道
- 切成你想要的形状,或者整根直接腌(但会需要至少一个月来彻底入味)
- 把白萝卜放进自封袋里,倒入腌汁
- 排出多余的空气,确保白萝卜都被浸泡在腌汁里
- 放入冰箱冷藏三天以上就可以吃咯!

为什么我选择自己做而不是买呢?
市售的腌黄萝卜通常是混合色素来腌制这黄萝卜,有些甚至只是用色素,当然也会再加上一些必要的添加物来增长他们的保存期。最重要的是,贼贵!自己做的不但好吃,而且还非常简单,何乐而不为呢!嘻嘻
可以保存多久?
食用的时候确保用具都是干净的,只夹出需要的份量,剩余的一直冷藏妥当,确保萝卜都是泡在腌汁里,那储存一个月都没问题哦!

Danmuji is a common Korean pickled yellow radish. Traditionally, it’s made with white radish that’s coloured with the natural orange‑yellow pigment from gardenia fruits. It’s usually served as a side dish (banchan) with staple foods, or tucked into kimbap as a filling.

Why would you like Danmuji?
Just like other pickles, Danmuji plays the role of being tangy, sweet, and crunchy—refreshing and cutting through richness. Whether paired with jjajangmyeon or tucked into a sandwich or kimbap, danmuji brings a unique burst of flavor that excites the palate and makes the dish taste even better!

Gardenia fruits ——
In traditional method, gardenia fruit is used to color Danmuji. It contains pigments such as crocin and carotenoids, which release a bright yellow hue when boiled in water. Gardenia also imparts a light fruity fragrance and subtle floral notes, enhancing the layers of flavor and making the pickled radish taste fresher and more appetizing. Nowadays, however, many people choose turmeric powder instead as a coloring substitute. Personally, I find the flavor slightly different, but if you don’t mind that subtle change, turmeric powder is certainly a convenient option.

Steps of making
- Crush the gardenia fruits to expose the seeds.
- Place all the fruits into a pot, add water, bring to a boil, then let it simmer gently for 5 minutes.
- Then strain out the fruits—the liquid left should be about 50g. If it’s lesser, top up with water.
- While still hot, stir in sugar and salt until dissolved.
- Add rice vinegar, mix well, and let cool.
- Peel the white radish deeply to avoid any bitterness.
- Cut into your desired shapes, or leave whole (though whole radish requires at least a month to fully absorb the flavors).
- Place the radish into a zip‑lock bag and pour in the brine.
- Press out excess air vacuum it so the radish is fully submerged in the brine.
- Refrigerate for at least three days before enjoying!

Why do I prefer making it myself?
Store‑bought Danmuji is usually made with mixed artificial colorings, and some rely solely on coloring only. Of course, extra additives are also included to extend shelf life. Most importantly—it’s ridiculously expensive! Making it yourself is not only tastier, but also super simple, so why not? Hehe.
How long is the shelf life?
When you need it, make sure you use tools that’s clean, only take out the portion you want, and keep the rest properly refrigerated. Ensure the radish stays submerged in the brine—this way, it can be stored safely for up to a month!
